Beef noodles with snowpeas and broccoli Ingredients 500g beef steaks, cut onto thin strips 250g dried noodles 1 onion, sliced 1 tsp minced garlic 2 Tbsp grated ginger 4 Tbsp oil 1 ½ tsp Leena Asian Spice 1/3 cup soy sauce 200g snowpeas halved 6 broccoli florets 2 tsp chopped coriander leaves Method Boil noodles in water and drain Heat oil in large frying pan or wok on a high heat Stir fry beef, onion, ginger and garlic until brown Add noodles, Leena Asian Spice, soy sauce, snowpeas, broccoli and little water Cook for 2 to 3 minutes on medium...

CHILLI CON CARNE Chilli mince with kidney beans Ingredients 500g beef, minced 3 cloves garlic, minced 1 onion, chopped 2Tbsp oil 2 tsp plain flour 2 tsp chilli powder 1 ½ tsp Leena Taco Spice 400g can of tomatoes 300ml beef stock 400g can of kidney beans Salt to taste. APPLE CHUTNEY Ingredients 1Kg green apples, peeled, cored and chopped 15g garlic cloves, chopped 4 cups malt vinegar 450g dates, pieced 1oog ginger, chopped 450g raisins 2 cups brown sugar ½ tsp cayenne pepper 2 Tbsp salt 1 ½ tsp Leena Chutney Spice Method In a saucepan add apple, garlic and vinegar Bring to boil and boil further for 10 minutes Add dates, ginger, chutney spice, raisins, sugar, pepper and salt Cook on low heat for 45 minutes or until the chutney is thick and tender Serve with food

ROAST VEGETABLES Ingredients Baby carrots 400g 2 large sweet potatoes , cubed 6 parsnips, chopped 3 small beetroots, cut into wedges 2 small red onions, halved 2 courgettes, cut into slices Half cup cubed squash (buttercup pumpkin) 2 tsp Leena Roast Vegetable Seasoning 1 Tbsp olive oil Salt and pepper to taste 2 Tbsp lemon juice  Method In a roasting pan add all the above ingredients. Mix well. Heat oven at 180F. Roast for 45 to 5o minutes or until cooked through and slightly charred Serve  * You can add vegetables of your own choice
