ROAST VEGETABLES

Ingredients

  • Baby carrots 400g
  • 2 large sweet potatoes , cubed
  • 6 parsnips, chopped
  • 3 small beetroots, cut into wedges
  • 2 small red onions, halved
  • 2 courgettes, cut into slices
  • Half cup cubed squash (buttercup pumpkin)
  • 2 tsp Leena Roast Vegetable Seasoning
  • 1 Tbsp olive oil
  • Salt and pepper to taste
  • 2 Tbsp lemon juice

 Method

  • In a roasting pan add all the above ingredients. Mix well.
  • Heat oven at 180F.
  • Roast for 45 to 5o minutes or until cooked through and slightly charred
  • Serve

 * You can add vegetables of your own choice
