- Baby carrots 400g
- 2 large sweet potatoes , cubed
- 6 parsnips, chopped
- 3 small beetroots, cut into wedges
- 2 small red onions, halved
- 2 courgettes, cut into slices
- Half cup cubed squash (buttercup pumpkin)
- 2 tsp Leena Roast Vegetable Seasoning
- 1 Tbsp olive oil
- Salt and pepper to taste
- 2 Tbsp lemon juice
- In a roasting pan add all the above ingredients. Mix well.
- Heat oven at 180F.
- Roast for 45 to 5o minutes or until cooked through and slightly charred
