BALTI CHICKEN CURRY
500g boneless chicken cubed, 1 medium onion minced, 3 tbsp tomato puree, 1 ½ tsp Leena balti spice, 1 tbsp yogurt, 4 tbsp oil, salt to taste, 1 green pepper chopped, 1 red pepper chopped, juice of ½ lemon.
Heat oil in saucepan on high heat and fry peppers for 1 minute. Remove and keep aside. Add chicken pieces and cook in batches until light brown. Remove and keep aside. Add little oil in saucepan if required. Add onion and fry for 2 to 3 minutes. Add Leena Balti Spice. Fry for 1 minute. Add tomato puree and yogurt. Cook for a few minutes. Add chicken pieces and salt. Simmer on low heat until tender. Add Pepper and lemon juice. Cook for 1 to 2 minutes. Serve hot with pita bread, rice and naan. Can add silver beet or spinach.

I do not like prepacked spice blends, they are almost always disappointing and bland so I usually make my own. I heard some good things about Leena Spices and decided to try a few. I have to say the quality of the spices is superb and the mixture ratios seem to be spot on. This Balti recipe is very good and so simple to make. What can be better, great food and quick and easy to prepare? I am sold, these are fantastic value spice blends and at $5 per sachet why wouldn't you try them?
