The Spice Measurements

  • Bay leaf – 2 g
  • Cardamom – 2 g
  • Cilantro (dried coriander leaf or coriander leaf powder) – 2 g
  • Cinnamon – 2 g
  • Coriander seeds or powder – 20 g
  • Cumin seeds or powder – 20 g
  • Garam masala – 10 g
  • Garlic powder – 10 g
  • Ginger powder – 10 g
  • Fenugreek leaves (kasuri methi) – 1 g
  • Kashmiri chili powder – 1 g
  • Smoked paprika – 10 g
  • Turmeric powder – 10 g

 

1.The Dry Roast (Blooming):Pan Preparation.

Heat a heavy-bottomed skillet over low heat. Add  Whole Spices coriander, cumin, cinnamon, and cardamom. Toast for 2 to 3 minutes, stirring constantly. Stop the moment you smell a warm, nutty aroma. Immediately transfer to a cool plate so they don't burn on the hot pan.

2.Cool Completely Before Grinding: Crucial for texture.

Letting them cool down completely prevents them from releasing oils and turning into a sticky paste when ground.

3. Grind to a Fine Powder

Grind the cooled whole spices into a smooth powder using a spice grinder or high-speed blender.

4. Blend and Sift

In a clean bowl, combine:
  • Ground whole spices
  • Garam masala
  • Garlic powder
  • Ginger powder
  • Fenugreek leaves (crushed between palms)
  • Kashmiri chili powder
  • Smoked paprika
  • Turmeric
Mix thoroughly until the blend is uniform in color and texture.

5. Sieve (Optional but Recommended)

For a professional, restaurant-style finish, sieve the spice mix to remove coarse particles.
