Vegetarian Okra Stew
Ingredients
- 1Kg Okra
- 1 onion chopped
- 1Tbsp minced garlic
- 200g tomato puree
- 200g chopped tomatoes
- 1tsp Leena Garam Masala
- Salt and pepper to taste
- 4Tbsp olive oil
Method
- Heat oil in a pan on medium heat
- Add onion and garlic
- Saute for 5 minutes or until translucent
- Add salt, pepper, garam masala, and stir for 2 minutes
- Add tomatoes and tomato puree
- Cook for 5 to 6 minutes
- Add okra and boil for 2 minutes
- Cook on low heat for about 20 minutes or until okra is tender.
- Serve hot
