Ingredients: Bay Leaves, Cardamom, Cloves, Coriander, Cumin, Galangal, Garlic, Kaffir Lime Leaves, Lemon Grass, Mace, Shallots, Star Anise and White Pepper.
RECIPE
BEEF MASSAMAN CURRY
Ingredients:
500g boneless beef cubed, ½ can of coconut cream, 1 can of coconut milk, 2 Tbsp cooking oil, 2 tsp Leena’ Massaman Curry blend, 1 cup of beef stock, 2 medium potatoes peeled and chopped, 1 tsp brown sugar, 1 tsp tamarind paste, 1 tsp fish sauce, ¼ cup of roasted peanuts (optional), salt to taste
Method:
1) Heat oil in a large saucepan over medium heat. Add beef and cook until brown. Remove and keep aside.
2) Add 4 tbsp coconut cream into the pan and cook for 1 to 2 minutes.
3) Add curry mix. Cook for 1 minute.
4) Add beef, coconut milk, stock, peanuts, potatoes, sugar, tamarind, salt, fish sauce and remaining coconut cream.
5) Stir to combine.
6) Reduce heat and cook until beef is tender.
7) Serve with steamed rice or noodles.
