MIXED BRAISED VEGETABLES
Ingredients
- 3 onions, peeled and cut into wedges
- 4 shallots, peeled
- 1 cup pumpkin, skinned, deseeded and diced
- 3 red peppers, deseeded and chopped
- 2 yellow peppers, deseeded and chopped
- 100ml vegetable stock
- 2 tsp dried oregano
- Salt to taste
- Pepper to taste
- 3 Tbsp olive oil
- 2 Tbsp chopped green coriander leaves
- 1.5 tsp Leena Tagine Spice
Method
- Heat oil in a pan on medium heat
- Cook onions and shallots for 5 minutes
- Add pumpkin and cook for two minutes
- Reduce heat
- Add red and green peppers
- Add oregano and tagine spice
- Cook for 5 minutes
- Add chicken stock and simmer for 10 minutes
- Season with salt and pepper.
- Garnish with coriander leaves.
