Mixed Braised vegetables

MIXED BRAISED VEGETABLES

Ingredients

  • 3 onions, peeled and cut into wedges
  • 4 shallots, peeled
  • 1 cup pumpkin, skinned, deseeded and diced
  • 3 red peppers, deseeded and chopped
  • 2 yellow peppers, deseeded and chopped
  • 100ml vegetable stock
  • 2 tsp dried oregano
  • Salt to taste
  • Pepper to taste
  • 3 Tbsp olive oil
  • 2 Tbsp chopped green coriander leaves
  • 1.5 tsp Leena Tagine Spice

 

Method

  • Heat oil in a pan on medium heat
  • Cook onions and shallots for 5 minutes
  • Add pumpkin and cook for two minutes
  • Reduce heat
  • Add red and green peppers
  • Add oregano and tagine spice
  • Cook for 5 minutes
  • Add chicken stock and simmer for 10 minutes
  • Season with salt and pepper.
  • Garnish with coriander leaves.
